Etruscan antiquities are MUCH rarer than Byzantine and I have no idea why you might think it is Etruscan.
It looks similar to other Byzantine era gold jewelry that I have seen.

Would you be able to suggest some reading for me to do? I would like to familiarise myself with other examples, if possible. This is all very interesting to me.

As the ring was source from Dubai (Middle East), Byzantine makes more sense.
It could also be Ottoman, but with the grapes and vines motif, less likely...but you never know.
Definitely not Etruscan. See the image below.
Not sure if any of you know this, but one of the real mysteries of Etruscan ring construction is not just how such infinitesimally tiny
gold balls were made in the first place, but how they were actually adhered to the ring itself. Etruscan magic?
