Are there examples of Justinian & Theodora depicted on gold coins, given her status? Or perhaps commemorative coins issued after her death?

No.

In fact, apart from the famous San Vitale mosaics in Ravenna I can't think of any contemporary depictions of Theodora at all. Though there is a marble head in Milan about which dubious attributions are sometimes made.
