Would the reading of this 11th century (?) seal be correct? I’m not entirely sure of the title, which might be abbreviated.

Lord, help thy servant Euthymios, (imperial?) spatharokandidatos?

Yes, I think you read that right. But the abbreviation after O is weird. You would expect at least a K, or the regular KANΔΔ. An alternative would be an omitted iota: spathar(i)os.

Indeed, the obv. depicts the seal owner's namesake Euthymios the Great (377-473).

For comparison, an anonymous seal of mine with this rarely depicted saint.

That’s a wonderful seal! Can your anonymous seal perhaps be linked to a monastery?

I don't think so, unfortunately. This seal falls in the large group of 11th century 'Anonymous' seals that feature iconography on both sides. These show the same diversity and preferences as the seals with legends. We could speculate that the saints are chosen because they were the namesakes of the seal's owners (like yours), but I don't think it is possible to link them to a monastery with a good degree of certainty.
